cinnamon raisin mochi with honeyed almond butter

This is a super tasty breakfast for those of us who cannot indulge in cinnamon rolls! 


Ingredients:
1 package cinnamon raisin mochi (I buy this one at Whole Foods)
1/2 c raw crunchy almond butter
3 T honey (I used local raw meadowfoam honey from the PSU farmer's market. It tastes like marshmallows!)


Preheat the oven to 450 degrees.


Cut the mochi into 1" pieces and place on a parchment-covered cookie sheet about 2 inches apart. Place in the hot oven for about 10 minutes, until they look like this: 

Let them sit until they are cool enough to handle, then cut a slit in the side of each one with a sharp knife.  Mix the honey and almond butter, and fill each mochi with about 1 T of the mixture. I use a butter knife to get a little glob into each one. When finished they will look like this:
